After a maximum care and delicacy olive harvesting process
when the olive is fully ripe, it is washed and then cleaned of all the
impurities caused by the harvesting process by means of the more advanced mechanical
methods.
With
more than one century and a half of experience, García La Moneda, S.L. has achieved a
perfect symbiosis between traditional methods and the more high-technology.
Traditional systems have been used from the time immemorial. Our mill is one of the last
artisan elaboration olive oil mills which are still in good condition and use in Spain. We
still go on using it. This elaboration consists on the cold natural way of pressing thanks
to the mat hydraulic presses. We obtain one of the main features of our oil, old golden
colour, adding also to the fragrance the great viscosity of the juice. Due to this
viscosity ( only obtained when milling with the traditional presses method), to its fruity
flavour and oiliness, a smaller quantity of oil both in cold and in hot is needed.
At the same time we also support the progress and high technology, that is
the reason why, besides the traditional presses system, we use methods which ensure higher
quality. We refer to the continuous system of the well-known firm Westfalia Separator
(pioneer of the two phases system). Thanks to this system we get an authenticable natural
olive juice of low acidity , thus it keeps pure all the organoleptic characteristics
coming form the land and climatic control, such us the greenish and green-yellowish tones
and its light bitter, fruity and freshness.
